Citrus Muffins
Ingredients:
• 2 Eggs
• 1/2 c Sugar
• 1/2 c Oil
• 1/2 c Milk
• Grated zest of 1 lemon
• Grated zest of 1 orange
• Fresh juice of one lemon and One orange (should measure 1/2 cup, combined)
• 1 1/4 c Flour
• 1 c Whole wheat flour
• 1 tb Baking powder
• 1/2 ts Baking soda
• 1/2 ts Salt
Directions:
Pour the wet ingredients into the dry ingredients and stir until just moistened. Spoon into a medium muffin pan (greased) and bake in a 400F oven for about 20 minutes. Remove from pan and allow to cool.
