Ingredients:
• 8 Cornish game hens
• 12 Large garlic cloves; peeled
• 5 g Dried oregano
• Salt (to taste)
• Pepper (to taste)
• 25 cl Red wine vinegar
• 1 dl Olive oil
• 150 g Pitted prunes
• 150 g Dried apricots
• 150 g Pitted green olives
• 100 g Capers (plus a bit of the juice)
• 8 Bay leaves
• 200 g Brown sugar
• 25 cl Dry white wine
• 10 g Italian parsley (chopped)
