Ingredients:
• 1 1/4 cup all purpose gluten free flour
• 3/4 cup tapioca flour
• 1 1/2 tsp baking powder
• 1/2 tsp baking soda
• 5 medium ripe bananas
• 2 eggs
• 1/2 cup brown sugar
• 1/4 cup white sugar
• 1/4 cup honey
• 1/2 cup butter, melted
• 1/4 cup peanut butter
• 1/4 cup honey roasted peanuts, chopped
Directions:
Combine flours, baking powder and baking soda, set aside. Peel bananas and smash with a fork until smooth. Cream bananas, sugars, and eggs together until smooth. Add honey and melted butter to banana mixture. Add wet mixture to dry mix until combined. Poor batter into greased 9×5 loaf pan. Top with chopped peanuts. Cover loosely with aluminum foil. Bake at 350 degrees for 45 minutes. Remove foil and bake an addition 10-15 minutes or until toothpick inserted in the middle comes out clean. Remove from oven and let sit 10 minutes. Cool on baking rack until fully cooled. Yield: 1 loaf
