Ingredients:
• 1 tbsp olive oil
• 1/2 cup minced carrots or bell peppers
• 1/2 cup minced onions
• 1/2 cup minced celery
• 2 cloves garlic, minced
• 1/2 tsp salt
• 1 1/2 lbs ground beef (90%/10%) or ground turkey
• 1/2 cup ketchup
• 1 15oz can tomato sauce
• 1 tbsp cider vinegar
• 1 1/2 tbsp packed brown sugar
• 1/2 tsp dried thyme
• 1/4 tsp black pepper
• Pinch cayenne pepper (option, or increase for spicier version)
Directions:
1. Saute carrots/peppers, onions and celery in olive oil until soft. Add garlic and cook for an addition 1-2 minutes. Remove from pan and set aside.
2. In the pan, cook ground meat until no longer pink. Do not drain.
3. Combine ketchup, tomato, vinegar, brown sugar, thyme, and pepper. Pour over cooked meat and simmer for an additional 10 minutes until flavors are combined.
