Port & Kraut
Ingredients:
• 3 pounds spareribs – in serving pcs.
• 2 teaspoons salt
• 1/4 teaspoon pepper
• 1 can sauerkraut – undrained
• 2 medium carrots – shredded
• 1 unpared tart apple – finely chopped
• 1 1/2 cups tomato juice
• 2 tablespoons brown sugar
• 2 to 3 t. caraway seed
Directions:
Season ribs with salt and pepper and place in a Dutch oven or 8×13″ pan. Combine remaining ingredients; spoon under and over ribs. Bake, covered, 350 degrees for 2 1/2-3 1/2 hours or until done. Baste several times with juices during the last hour of cooking.
4-6 servings.
