• 1 cup peanut butter (creamy or chunky)
• 3/4 cup granulated sugar
• 1/4 cup brown sugar
• 1 tsp vanilla
• 1 egg
Mix all ingredients together. Use cookie scoop or roll into 1″ balls. Roll balls in sugar and place on ungreased cookie sheet. Press each cookie with a fork in an X to make a criss-cross shape on the top or use a juice glass to flatten if flat top is preferred.
Bake at 350 degrees for 10-15 minutes or until brown.
Yield: approximately 2-3 dozen Gluten Free Peanut Butter Cookies depending on size of ball.
