• 1 tomato, diced
• 1 c. spinach, shredded
• 2 tblsp. olive oil
• 1 c. mushrooms, diced
• 1 lb. chicken breasts
• 2 c. (4 servings) of minute rice
• 10 oz. Philadelphia Cooking Cream – Italian Cheese & Herb
• oil, to coat
• dash of pepper
• dash of garlic powder
• dash of basil
• dash of thyme
• dash of oregano
Chicken Marinade: Mix the chicken and the chicken marinade ingredients in a zip-loc bag. Begin grilling chicken on medium heat.
Cook minute rice (about 5 minutes).
About 5-10 minutes prior to dinner time, in a medium size sauce pan, saute the first 4 ingredients until mushrooms are cooked. When chicken is done (chicken is done once internal temperature is above 165F), mix chicken and Phili Cooking Cream into the same sauce pan until heated throughout.
Pour Phili Italian Cheese & Herb Cooking Cream chicken mixture over cooked rice for a delicious dinner!
